Delectable vegan romaine salad
I love to eat a light yet refreshing romaine salad with sliced veggies. I feel satisfied and nourished while eating this tasty dish.
Ingredients:
1 head of romaine lettuce
1 large tomato, diced
1 large red onion, sliced into thin strips
1 red pepper, sliced into thin strips
Your fave vegan dressing
Homemade croutons:
2 slices of bread, diced into cubes
Oil to coat bread pieces
Oregano and sugar
Equipment:
Large bowl, sharp knife, cutting board, oven or toaster
Optional ingredients:
Fresh cilantro
Instructions:
Slice the romaine lettuce into thin long strips. Place into large bowl. Coat strips of lettuce with 2 T of your fave vegan dressing. Toss.
For croutons:
In toaster: toast slices of bread whole then dice into pieces. Add reminding ingredients to bread pieces mixing thoroughly.
In oven: dice bread into pieces, coat with oil and seasonings. Bake 350 degrees until crispy.
Grab a large plate and place the lettuce in one thick layer. Add sliced veggies and croutons. Grab a fork and enjoy!
