Vegan Simple Easy Bean Tacos
Tacos are one of my favorite dishes that I eat at least once a week. There are so many various ways to top and fill tacos. This recipe is a classic, simple staple that can be altered.
Ingredients:
1 can of black beans
1 can of northern or navy beans
1 package of mushrooms, chopped
Seasonings: chili powder, cumin, garlic powder, coriander, cilantro, salt, oregano (listed from greatest to least)
½ onion
Package of tortillas, hard or soft shell
Handful of romaine lettuce
Salsa:
1 large tomato, ¼ finely diced red onion, generous amount of garlic powder, 2 pinches of salt, cilantro, splash of soy sauce or similar substitute, 1-2 T of oil
Equipment needed:
Skillet, cutting board, bowl
Instructions:
Dice ½ onion. Grab the skillet and add 1 T of oil to pan. Turn stove to medium heat. Add onions and allow to soften for about 4 minutes.
While the onions are cooking, dice the tomatoes and place them in a bowl. Add the remaining ingredients to the bowl stir and chill in fridge.
Open both cans of beans, drain and add to the skillet with the onions. Add package of mushrooms to the mix, stirring. Add seasoning to skillet with beans and onions. Stir and allow to simmer for 10 minutes.
While bean mixture is cooking, warm tortilla on stove in skillet for 1 minute on each side until slightly cooked.
Optional toppings: cilantro, lime squeeze, vegan cheese, vegan sour cream, guacamole
