Delectable vegan vegetable sandwich

I love sandwiches! When I get a craving I grab this recipe.


Slices of bread

1 large onion, sliced

1 red pepper, sliced

1 large zucchini, sliced





Vegan slices or shredded of cheese

Equipment: Skillet, cutting board, sharp knife


Place sliced veggies place into bowl add generous amount of seasonings. Mix thoroughly. Drizzle a generous amount of oil on the bread slices, to prevent dryness.

Add 1 T of oil or vegan butter to skillet, saute vegetables on medium heat for about 5 minutes or until vegetables are slightly tender.

Place cheese on one bread slice; add a handful of vegetables onto the other bread slice. Place the two slices together and press down.

Heat 1 T of oil in a large skillet. Turn the heat to medium high. Once the oil in the pan is hot, add the sandwiches, carefully. Cook for 4-5 minutes on each side, allowing bread to crisp.

Remove from pan and allow to cool. Slice in half and enjoy! Add homemade fries or potato chips for complete meal.
