Delicious Vegan Quick Easy Bean Burger

This recipe is easy, delicious, and quick bean burger recipe. Soy and meat free. Double or triple for lunch or additional dinners. The bean burger patty freezes well.

Ingredients:

Hamburger buns or regular bread slices

2 cans of black beans, drained

handful of oats, finely chopped

1 cup of cooked rice

1 cup of finely chopped nuts, walnut or almond

1/2 cup onion, diced

1/2 cup pepper, diced

1 T of garlic, diced

Seasonings: (1 T of each )chilli powder, cumin, oregano, black pepper, salt (to taste)

flax egg (1 T ground flax seed mixed with 3 T of water)

oil for frying

Toppings:

1 large tomato, sliced

handful of romaine lettuce

vegan ranch or ketchup

sliced sauteed onion (optional)

Equipment:

cutting board, can opener, sharp knife, saran wrap or aluminum foil, skillet, large bowl

Instructions:

Bean burger mixture: In large bowl, mash 1 can of drained beans with fork. Add rice, the other can of beans, oats, seasonings, onions, peppers, nuts, garlic and flax egg. Mix very well with hands or spoon. Grab large portion of saran wrap or foil and place onto flat surface. Grab a handful of bean mixture. Press into patty with hands. Put bean patty into saran wrap or foil. Wrap. Press with hands again. Continue until all patties are formed. Chill.

For the bread: Heat 1 T of oil in skillet on medium-high heat. Once oil is hot, carefully place bread slices in skillet. Cook for about 3 minutes ,allowing to crisp. Set aside.

Heat skillet with 1 T of oil. Once oil is hot, place bean patty into skillet. Carefully, fry on each side until crisp about 5 minutes; the oil will be hot.

To assemble: On a large plate, spread buns with vegan ranch or ketchup. Next, place bean patty, onions, lettuce, and tomato onto buns.

Enjoy!

For complete meal: Add homemade fries or chips.
